British Columbia’s spectacular Sea-to-Sky corridor from Vancouver to Whistler is one of the most scenic stretches of road in the world and has been the backdrop of the RBC GranFondo Whistler for the past decade. Starting from iconic Stanley Park in downtown Vancouver, riders make their way up the Sea-to-Sky highway treated to Pacific Ocean views, majestic mountains, and cookies. Yes, lots of cookies!
For the past couple of years, as riders pass through the 100km mark of the 122km GranFondo route from Vancouver to Whistler, Steph Corker and her crew hand out thousands of homemade cookies (4,000 to be exact) at what has been known as the “Corker Cookie Corner.” Corker’s Cookie Corner has given thousands of riders something to smile about and an extra boost of energy at a critical juncture of the big ride.
These days, with much of the world fighting the spread of COVID-19, many cyclists have turned to indoor rides on trainers or solo rides without the café stop during this unprecedented time of social and physical distancing. We thought it would be fitting to help fuel and/or reward these rides of the times with Steph’s legendary cookies which can hopefully also help us all get through this challenging stretch.
While we didn’t physically get our hands on any cookies, we did get the recipe! So here it is, straight outta Steph’s grandma’s house…
Ingredients:
- 3 cups oatmeal
- 1 1/2 cups flour
- 1 1/2 cups brown sugar
- 1 1/2 cups butter
- 1 1/2 teaspoon vanilla
- 1 1/2 teaspoon baking soda
- 1 cup chocolate chips
Preheat oven to 325°F
+ blend butter, brown sugar, vanilla
+ whisk remaining dry ingredients together
+ add choco chips last
+ squeeze/mix everything together and form balls for baking
Bake at 325°F for approximately 10-12 minutes
Enjoyed best after approximately 100km on the bike 🙂
